Empanadas are not quesedillas.
Any recipe that floats your boat, but meat based is my preferance.

I'm sure you are right. I know some guys that are immigrant cooks from Oaxaca and they think of empanadas as quesedillas, though. Where are you from, Harry?

New Jersey. Around here, quesedillas are various fillings between 2 soft tortillas (soft tacos?) shells. These are usually grilled, not fried as the ends are not closed. Empanadas have a dough shell with various fillings and usually deep fried. The former are usually served cut like a pizza, the latter are half-moon shaped and are completely enclosed by the dough.

I like to stuff them with beef picadillo and goat cheese. Sometimes I throw some raisins in, too.

Is it the dough you need or the filling - or both? And how quickly do you need it? I can give you ones for beef, mushroom and cheese, and even a sweet version with pumpkin... but I'm in the process of moving and have to locate them...
