Tonight's Pizza

by Randy P » Sun Jun 15, 2008 11:55 pm

Made the dough yesterday and gave it a slow rise in the fridge overnight, was very tasty. Homemade Italian sausage, dough, sauce, bought the pepperoni and cheese. -RP

Dang it was really good. Hard to beat a pizza cooked in a charcoal fired Big Green Egg. -RP

I set the plate setter legs up with the main grid on the legs and used a 16" Air Bake pan on the grid. Dome temp was 500. -RP

Thanks. Have you ever used it in the 700 plus range for pizza or anything else?

I have but I get more consistent results at 450-550. Crusts can burn pretty quickly at 700 and there is a better chance of flashbacks at the high temps. -RP

My regular gas oven cooks pizza at 500. Of course, I don't get the nice wood benefits. (Stuart, behave!)

Yeah, I am worried about the flashbacks as well. Thanks for your response.

Randy, that might be the most professional looking homemade pizza I've ever seen. Not that the raggedy ones don't taste as good, but mine sure have never looked like yours.
