I Love Escargot!

Tonight I threw a can of chontifrois escargot on top of a Trader Joe's Alsatian Pizza. Ten minutes in the oven and, boom, pizza heaven.

Anyone else love snails?

I'm trying to find some more recipes to use escargot in, anyone like them in anything other than the traditional butter and garlic?

I'm with Celia here. I love 'em! I had them fried once at a staff meal before service. That was nice. I have also had them in a blood orange butter sauce and found it to be rather enjoyable. They are great tossed in pasta with a good butter sauce, too.

Try it! It's like having the best mushroom pizza of your life. The only thing I did was cover them in butter and put a little cheese on top to make sure they wouldn't dry out.

My friend Trung also makes a baked goat cheese casserole with escargot - yum.

I tasted Escargot once....on a dare.


Chewy garlic was all I got and I couldn't understand the appeal.

You'd change your mind if you tried escargot at Le Cafe Miche in Albuquerque. Yum. They use a splash of Pernod in the butter and garlic. Lots of crusty bread, too.

I absolutely love them too Joe! But I haven't had them without garlic and butter. I'll have to try them on pizza sometime. Sounds yummy.

We also love a dish of braised mushrooms, tomatoes, garlic, a little pancetta, and snails that gets served over a thick slab of toasted bread. Tres yummy with a glass of hearty red.

I've never done this, but just thinking about it, why not toss them with spaghetti, garlic and olive oil, the way you would clams.
Seems like that would work.

It's the garlic butter that's so good. The snails might as well be erasers. In fact, I'd rather eat erasers than snails.

Jenise, I think you could make the argument that a lot of foods are just platforms for spices and seasoning.
