Freshly baked book by Jeff Hertzberg - "Artisan Breads in Five Minutes a Day" is getting great reviews including The NY Times.

I met medical doctor Jeff (and Laura) of Minnesota in Oaxaca 25 years ago and we met again in London this summer.

Basically the two week lasting dough is made in advance and kept in the fridge.

Bits are grabbed out as needed to make all sorts of breads from pizza to pitta to naan.
