Looking for a recipe for cracked wheat bread...

by Robert Reynolds » Sat Nov 17, 2007 9:02 pm

Does anyone have the old recipe booklet from Fleishmann's Yeast Company? It had a recipe in it for cracked wheat bread, that made 2 loaves or also could be used for dinner rolls.

I had a copy back in the 1980's, but didn't think to grab it after my first marriage ended. If you have it, or a comparable one, would you please post it for me in the next couple of days? I need to make rolls for Turkey Day, and that is probably the best I ever made.

I've heard the Tassajara Bread Book is pretty good, and it dates from the same time frame.

I happen to own a couple of old Fleischmann yeast cookbooks. One of them has:

Cracked Wheat Bread (makes 2 loaves)

4-3/4 to 5-3/4 cups flour
3 Tbs sugar
4 tsp salt
2 pkg yeast
1-1/2 cups water
1/2 cup milk
3 Tbs margarine
1 cup cracked wheat

Condensed instructions:

Large bowl: mix 2 cups flour, sugar, salt and undissolved yeast.

Combine water, milk and margarine in saucepan. Low heat til liquid is warm (120-130F).

Gradually add to dry ingredients; beat 2 min med speed. Add cracked wheat; beat high speed 2 min. Stir in addnl flour to make soft dough.

Knead by hand til elastic, 8-10 min. Cover. Rise til doubled--abt 1 hr.

Punch down dough. Let rest on board 15 min. Divide in half. Roll each half to 12x8 in rectangle. Shape into loaves. Place in greased loaf pans.

Cover, let rise til doubled--1 hr.

Bake 400F, abt 30 min or til done. Remove from pans, cool on racks.
