I'm making pesto today and I am planning on freezing about half. I have forgotten what I leave out for the frozen batch. Is it the EVOO or the cheese?

Marcella Hazan advises leaving out the cheese if the pesto is to be frozen. I'm not sure why. No problem with the oil, make it and freeze it and it should be fine.

In my experience, it freezes fine with the cheese.

Then make it and freeze it, period. I never leave anything out and don't have any problems. Though some may be more picky, I just don't care. It's just pesto, after all.
