Chateau Coufran 1995 Haut-Medoc ($24.99)
Very dark garnet. Cassis and spice aromas, rather closed and tight; opens up to Bordeaux "cigar box" with a little time in the glass. Black-fruit and licorice flavors, more open than the nose, over firm acidity and shy but substantial tannins. A bit on the austere side right now, closed up a bit since last January's tasting, but shows quite well with appropriate food. U.S. importer: Kobrand Corp., NYC. (Dec. 6, 1999)
FOOD MATCH: Excellent with lamb chops pan-grilled with rosemary and garlic, and also with potatoes mashed with Stilton and a drop of truffle oil.
