This is a popular soup at some of the local Italian restaurants and you post made me think of it. I got the recipe from a friend, who\'s wife worked at one of them. I haven\'t made it in a while, but I think I will.

4 cloves garlic or garlic powder equivalent
1 medium onion, chopped
2-3 T olive oil
GREENS 2 boxes frozen spinach AND 2 boxes frozen mustard greens OR Fresh Escarole OR Fresh Swiss Chard
BEANS 3 cans white Canelli beans OR Northern beans and Black beans
6 cups chicken stock
Grated cheese to taste
Salt & Pepper to taste
(OPTIONAL) - Hot Pepper chopped or Crushed Red Pepper
(OPTIONAL) - add chopped bacon, ham, salami or pepperoni when sautéing.

Saute onions, garlic and meat in olive oil. Add canned beans with liquid to saute mixture. Add 6 cups chicken stock and greens. Bring to boil, then reduce to simmer for 10 minutes. Add grated cheese. Add salt and pepper to taste.
