What is your favourite quick breakfast treat?

by Sue Courtney » Wed May 31, 2006 5:01 pm

Over on the original FLDG, Jenise talked about avocado on toast as a quick breakfast treat. This is something I love too and was reminded of yesterday as I spread the gorgeous, soft, creamy, lime green avocado flesh over my toast, seasoned it with salt and pepper and scoffed it.

Then Karen in this thread Basil Growing Questions mentioned how she loves her new breakfast treat ...

I'm in love with my new breakfast treat.......one slice of toasted, whole grain bread spread with a Laughing Cow lite French Onion cheese wedge, fresh basil and sliced tomatoes. Makes a great breakfast and another way to use my basil. Have you tried the Thai Basil? It is fabulous.

So I had to post my other favourite quick breakfast treat, which is Banana on toast topped with Thai basil. I take a whole firm banana, chop it in half to get two long bits, and split the long bits in half lengthwise. I place one piece of the banana onto hot buttered toast, chop the banana finely and spread it, then top it with finely chopped Thai basil. I think this is absolutely yum, the Thai basil adds a lovely bright anise flavour and one banana will do four pieces of toast - two for him and two for me.

So, what is your favourite quick breakfast treat?

Summer tomatoes are almost here, so here is another quick breakfast treat I love. A small bowl of garden toms, yellow pear, red cherry, Sun Gold, Cherokee Purple, Brandywine, cut up, with Maldon Salt and freshly ground pepper. Sometimes I used lemon infused salt and sometimes smoked salt. Oh yum!

Eggs cooked by the two girls who spent the night.

Oh, you mean for real? Peanut butter (chunky style, non-sugared) on toast.

Sue, you mentioned one of them. Another: breakfast pizzas. English muffin toasted dry, then topped with a slice of melty cheese, a slice of tomato, and a sprinkle of dry oregano, toasted again until the cheese melts. And another: a bowl of ramen soup.

And leftover salad, veggies, quesadillas, and when I make stuffed cabbage rolls, I always save one for breakfast the next morning - eat it cold!!!! :P
Did I mention I think cold cereal tastes like dry dog kibble?

Cold pizza is one of my favorites, too, Howard. But more usual is my healthy favorite - a banana spread with peanut butter. Natural PB, creamy, made with only peanuts and salt.
Cheers,

Niki
