Seasoning/spice suggestions?

for a vegetable melange of green beans, carrots and beets (red and/or golden).

The other night I threw some green beans and golden beet slices in a pan and simmered them with some garlic and some lemon-pepper. It turned out ok, but wasn't as good as I would have liked.

So I'm looking for some ideas to try. I'm thinking of maybe a ginger-soy mix, or some sort of balsamic vinegar glaze, but there have to be other spice combinations that would work well.

I'll probably also roast the combination next time.

Have you tried horseradish? With earthy root vegetables like carrots and beets, it's sublime. The green beans probably wouldn't object to it, either. :)

Caraway seed.

I kinda like the idea of ginger but as a bass note; hence my suggestion for something treble.

All three will go well with tarragon and chives, lemon and butter will go with all the veggies and the herbs. Orange zest will go with all. Can you build on this, maybe a drizzle of honey.

I'm pretty much a stickler for using celery seed in cole slaw, but recently I was served dill seasoned cole slaw with a fish fry and loved it.

Lots of good ideas! I never would have thought of horseradish - will have to find some. Whole Paycheck and Trader Joe's didn't seem to have any.

I did get some tarragon and chives and will try that soon. Also the Herbs de Provence (and Penzey's has a similar mix- Boquet Garni - that might work too).
