We've talked here before about what to do with rhubarb. This sounds absolutely delicious!!!

SERVINGS: Makes 1 drink


The amaro in this unusual sparkling cocktail gives it a pleasing hint of bitterness.


1 small rhubarb stalk, smashed, plus 1 or 2 strips of rhubarb stalk for garnish
Ice
1 1/3 ounces Cognac
2/3 ounce Nardini amaro (bittersweet Italian liqueur)
2 ounces chilled Champagne

I've been seeing rhubarb showing up in a bunch of cocktail recipes lately, many calling for a rhubarb syrup or something along those lines. Haven't tried one yet but they sound good.

They are (or can be) very good, MIke. There's rhubarb bitters, rhubarb syrups, puree of rhubarb; I've seen and had all.

And for this recipe, there's always Rabarbaro, a bitter liqueur made with rhubarb. If you need to dial it to eleven, I mean. :D
