I picked up a fresh road-killed ring neck phesant (still warm ,no rigor mortis) today and paired it with a 2011 Nostre Pais, the white Rhone from Michel Gassier. The temps today were all around 40 deg. F. so I was not worried about the bird. The match was great as the phesant was cooked with an apple in the cavity and olive oil over the breast and legs. Once again, as previously noted, there was great minerality but the lacquer note was gone and it seemed more pear spicy to me. I re-bought this wine so I have a lot and can see how it ages at least over the next 5 years.
