White soy sauce?

In another thread, Bob Ross mentioned this dish being served at a charity dinner: Sashimi with olive oil and white soy sauce. He didn't attend but was relating the menu as described by a friend of his.

I have never seen white soy sauce and I'm most curious! If anyone around here has tasted it, can you provide us with a description?

Speaking of white: I saw a bottle of white balsamic vinegar the other day. That was news to me. Can't say I've ever seen white soy sauce, though.

White balsamic vinegar's been around for awhile, and it's good. Makes a great marinade for onions, say, turning fresh onion pieces into a quick pickle that's lightly sweet and complex. Did you buy any?

No, I was just flashing through the store when I noticed it. I have so many kinds of vinegar already, I don't know if I need anymore. Although when I see things like date vinegar or other unusual ones, I'm tempted.

Jenise, my friend says white soy sauce is called Shiro in Japan. It is light colored, is made with more wheat and very little soybean. It has a sweet taste. She said it came from the Kansai region and has an old history.

Apparently a condiment of the moment these days.

Stuart, thanks for the links. Googling yesterday, I found only one online for about $20, which made me balk. Good thing, I just ordered the exact same product it from Corti Bros for little over a third of that. Corti has more expensive versions but they're all on back order. Ordered a bunch of olives, too. Again, thanks.
