corked potatoes

by David Creighton » Sat Jan 18, 2014 8:15 pm

people from the wine site will know that TCA comes from any contact between chlorine and wood or paper. wineries have largely abandoned chlorine cleaning materials since they interact with cases and palets on the floor. but produce people haven't. tonight i had a potato dish that was obviously 'corked' i.e. infected with TCA. potatoes of course are packed in cardboard boxes and sit on the floors of various distribution points. these floors seem to still be cleaned with chlorine based products. even blanching didn't get out the TCA. but as an even worse case; you haven't lived till you smelled 'corked' roses! yep, they come packed in cardboard too.
