RCP: Nasi Goreng

NASI GORENG (INDONESIAN FRIED RICE):

2 Onions chopped
2 Garlic cloves minced
½ C Light sesame oil
1 C Rice
2 C Chicken stock
1 C Shredded cooked chicken breast
1 C Diced ham
1 Small can shrimp
1 tsp Shrimp paste
¼ tsp Cayenne
¼ tsp White pepper
¼ tsp Mace
1 Tbl Smoky paprika
2 tsp Galangal
1 tsp Ground coriander
1 tsp Ground cumin
½ tsp Granulated garlic (or garlic powder)
¼ C Peanut sauce*
¼ C Chopped cilantro

*Two tablespoons of Conimex Gado Gado with 3 tablespoons water heated together, or 2 tablespoon of peanut butter with 1/8 teaspoon of cayenne and 3 tablespoons of water.

Cook the rice in the stock well ahead of time and let it cool completely. Nuke (microwave) onions in half the oil for nine minutes, add garlic and nuke 1 more minute. Meanwhile dissolve shrimp paste in remaining oil, then all onion mixture, and the spices mixed together. Cook five minutes. Add the rice and brown. Add shrimp and meat and cook until heated through. Meantime combine peanut sauce and cook until heated through. Combine with rice and mix well. Garnish with cilantro and serve.

Love Nasi Goreng, sometimes topped with a fried egg! This recipe is a nice quick one.
