Need diabetic side dishes

I've been charged with creating some meals for my SIL who just had knee replacement surgery and who's also diabetic. So, she's not terribly ambulatory yet. I have a decent handle on entrees, but I need some help with side dishes. Any suggestions???

You'll need to keep the glycemic index of your dish low. This can be done using whole grains and vegetables and keeping the fat content fairly low. You can increase flavor using spices.
