Separating eggs - Wow, is it that easy?

Short video on how to separate eggs.

Many decades ago there was a woman on BBC that was shown on public tv here who showed me the method I've using ever since. You break an egg with one hand, into your other hand, and let the white run though your fingers. So long as you don't break the yolk it works fine, but that is true for other methods as well.

I have a little egg separator thingy, break egg into it, white falls out immediately, yolk stays put, no messy hands

This is my preferred method as well, although I'll switch to hands if I mangle the shell.

Me too. Since my son doesn't like egg yolks (or so he thinks!) I've spent a lot of the last few years separating eggs. Anyone need a few kilos of egg yolks?

If you are looking for something to do with your egg yolks, check out "conventual" deserts from Portugal. Because egg whites were used by nuns to stiffen their habits and by the winemakers to fine wines, there was an excess of yolks. So a whole egg yolk based category of deserts was developed in the convents.

Pretty cool video, Peter. I wonder if one can do several eggs without removing the yokes and store the yokes for a short period of time in the bottle. I like the fact that you can use the bottle to place the yoke exactly where you want it, too. Not getting hands dirty is another plus. I am always looking for ways to reuse plastic bottles as mony times as possible before recycling them.

Thanks, guys. We do make the occasional aioli (why not add garlic if you can, Howie? :wink: ) but truth be told there's only so many yolks we feel like consuming on a regular basis.

I know folks who never eat yolks, just whites, and they don't like those awful containers of "whites" from the supermarket so they throw out the yolks. I find that totally wasteful. Why not quickly cook them up and feed them to the dogs and cats. We give our dog cooked eggs now and them mixed with the kibble, it is a treat for them.

This is why we usually have several tupperware containers full of whites in the fridge at any given time. Periodically, my wife will make macaroons or meringues out of them.

Hard to see meringue in my household but macaroons would be great. The last recipe I tried fell completely flat (meaning, I got something that resembled coconut florentines). Do you have a recipe that a relative non-baker can bake?

Not sure - my wife's always made them and she's a pretty good baker. I'll check with her, though.
