During their heyday both Alhambra and Casbah featured the dish in its most traditional form. Alas, both of those restaurants are now part of culinary history. Today, because the very best restaurants change their menus on a regular basis depending on both the mood of the chef and the quality of what is available in the market, it is difficult to know from moment to moment where various traditional dishes such as boeuf tartare can be found. In recent months I have dined on fine boeuf tartare at Yo'ezer Wine Bar, at Manta Ray and at Zepra. Wise o phone and ask whether it will be on the menus on the evening of your choice. At a guess, I would think Yo'ezer the best bet.
