Potatos with frost?

Hi,

Anyone know this?

I have my own vegetable garden and dig up som potatoes this morning, they were soft and had frost.

I let the potato peel on the potatoes and boiled it and the potato got hard again. Why does this happend? The potatoes tasted good as always?

Given that a potato is mostly starch, I wouldn't think that frost would affect it much, and that it would turn out the same when cooked. The ice crystals might make it feel mushy on the surface, but once you cook it I would think it would come out the same, since the cooking involves breaking down the starch.
