Opened to drink with Gougeres and a lazy afternoon of watching football and sitting on the sofa with the cats. This required that we stop being lazy. Vinous and deep, it was hard to describe other than “delicious and long.” It showed fruit, but what fruit was impossible to describe. Savory and toasty, but not in any way “aged”, this felt fresh while also feeling mature. I wish I had another half dozen bottles to follow this, as it seems like it might be immortal.
