2000 Cour-Cheverny Vendage Manuelles le Petit Chambord par Francois Cazin, a Louis/Dressner Selection

Second bottle, the first was unbalanced and not very remarkable. What a difference 6 months makes. This was delightful. Apples, pears, minerals and wonderful tart acidity. Beautifully balanced and a great match for Alaskan king salmon with lemon butter and caper sauce.

If I were going to design a white wine to my exact specifications it would be this one. Fruit/minerals/acidity/balance/food enhancing - what more could I ask for? I had no idea it was such an obscure varietal. If you google "romorantin" the first hit is from our very own Robin Garr from a column he wrote in 2004:http://www.wineloverspage.com/wineadvisor1/tswa050221.phtml.

I guess I'm in trouble now. Hopefully it will stay obscure, though. The bottle only set me back around 20 bucks.
