Is this about planning trhe configuration of a wine cellar, or planning the contents (wine) of a wine cellar?

And is this for personal/home cellars, or restaurant wine cellars?

I'm going to plan a wine cellar for the production of the wine, in particular I want determine the proportions for a production of approximately 1000 hl.
I will start describing the history and the state of art of production cellars today, then I will make the dimensioning and the 3D modeling of the containers and the systems of transport (piping) of the product in the same wine cellar. Then I will consider all the necessary systems of transport, from that one of the grape to that one of the services of warm water, compressed air…

I tried looking up some info for you but didn't have much luck. Two wineries that impressed me with their layouts are Chateau Des Charmes and Stratus, both located on the Niagara Peninsula in Ontario, but there seems to be no details about their cellars/storeage/transport in their websites. Chateau Des Charmes has several large storage tanks all located below ground level, thus maintaining constant temperatures below 60F. Also in this area is their bottling and sparkling wine operations. Their wines are excellent. Stratus has won numerous "green" awards for the design of the winery, which uses no pumps, as everything travels downhill through the process and they make a lot of use of solar power and passive heating/cooling.
