2002 Dauvissat Chablis "La Forest"
Great wine. The velvet unctuousness is set off by sublime cut and intense minerality. Phenomenal weight, depth, sap, and midpalate presence. Great wine. At 25euros it is silly.

2000 Dauvissat Chablis "La Forest"
More crisp, subtle, and long than the 02, obviously in a different stage of evolution. With several hours of air it fills in a bit and shows the layers of depth and complexity that it can pump, but still feels a bit inbetween to me. Of course all things considered this showed quite well, lovely material, crisp subtle structure, tingling minerals and all, but not doing that lovely dance between sap and mineral that made me weak in the knees with the 02, that's all. And, at 28euros it is still great and silly.

Rahsaan,
I assume this wine is too young to really be hitting its stride. I have 6 bottles but was not going to open any for a couple more years. Agree?

I don't know, there are tons of La Forest notes here, many from Fl Jim, so others may have more experience, especially with what they develop with age.

As such, it probably depends how you like your Chablis, but I was not at all sorry to open either of these bottles, especially the 02, which I would happily open again tomorrow it was singing so well for me, although will it evolve, yes.

The 00 was more out of its stride and of the two I would probably say hold off on those for a while, depending how many you have. But that said, I still had fun with the 00. So...
