Another note from vacation - this time we hand carried the wine with us to enjoy one evening after a hike. We did just that, taking a 5 of 6 mile trek up the side of a mountain in Banff, and them coming back to share a lovely glass of beautifully evolving Eiswein.
First sign of evolution was the golden color with just faint hints of green. The aromatics were somewhat more honeyed and tropical than when this wine was first released (and more resembled a frozen apple and slate concentrate), and the richness and depth were marvelous. There was tons of extract and sweetness with a razor sharp acid finish that cleaned everything up. Delicious stuff.
