I drank this with a whole pan-fried rockfish prepared in a mild Thai sauce with baby corns, pineapple, peppers, and onions. Pretty good match.

N.V. Bollinger Champagne Special Cuvée Brut - France, Champagne (7/24/2009)
Light gold, plenty of mousse. Lemon/citrus, just a little yeasty bready note on the nose. Medium body, nice acidity and balance, some peach added to the citrus on the palate, and a definite hint of sweetness, medium finish. Very good.

Curious - when did you buy this bottle? I have not noted any real sweetness in Bolly lately, except for some bottles I bought a few years back thatlikely had some 2003 juice in them (and thus lower than normal acidity).
