WTN: Ridge SCM Cabernet '93...(short/boring)

Had the other night w/ my poached tofu:
1. Ridge SantaCruzMtn Cabernet (86% CS/10% Merlot/4% PetiteVerdot; 12.8%; Drk: 4/95-4/07: PD) 1993: Very dark color w/ slight bricking; strong herbal/Cab earthy/very Bdx-like some toasty/smokey/oak/FraperPerfume some dusty/earthy/SCM somewhat complex nose; tart bit hard/tannic rich herbal/Cab/blackcurranty very Bdx-like some toasty/oak/smokey classic SCM/dusty flavor; long some tannic/hard rich/herbal/Bdx-like/Cab smokey/pungent/oak bit blackcurranty/Cab finish w/ some complexity; still can go another 3-5 yrs; little signs of drying out and astringency. $28.00

A wee BloodyPulpit:
1. I was a bit worried about the anemic alcohol content and that this wine wouldn't stand the test of time. Shouldn't have worried and noted Draper's recommended drinking window. He's amazingly accurate, if a bit conservative, on his predictions.

I remeber this wine but consumed my last quite some time ago. Its a shame but after about this vintage can no longer find the SCM in my neck of the woods. More important what is/how does one poach Tofu?

Just jerking folks chain, Brian. I just forgot what I had for dinner that night. Didn't think anyone would catch it.
Tofu, to me, is something of a food joke...like LittleDebbies. I've tried it enough to know...it's not my thing.

The 1991 SCM Cab is drinking beautifully right now.. I've had 3-4 bottles in the last 6 months... awesome. Even better than the 1991 Monte Bello side-by-side, though it was close. For whatever reason, the SCM bottling ends up at big box stores, like Bev Mo or Total Wine. Hard to fine in your usual wine shop. Not sure why. I've been buying up older vintages like a vacuum cleaner. Great deals on them.
