A very good Baco from Willow Springs, a winery near Stouffville. This is in fact located north of Toronto - not at all in the Niagara region or, in fact, near any other major winemaking area. That said, the wine is a blend of fruit grown on-site, up at the winery, and some Niagara-grown Baco. Available on general list at the LCBO.
12.4% alc./vol. Medium-garnet colour with good saturation, though essentially transparent. Complex, spicy Baco nose with bacon fat, pencil-shavings-type oak, some game, and what I think is also a fair dose of brett (as a brett fan, I couldn't be happier). A very "non-primary" type nose; that is to say, appropriately and pleasantly complex; multi-layered. Tart, round, but very balanced acidity on the entry; not sour at all (as some Niagara Bacos tend to be). Very nice, light body; cleansing, dry and flavourful. Very decent alcohol level; no burning or searing. Very pleasant; a good food wine. Round and spicy on the mid-palate, with telltale band-aid bretty replays. Wonderful!
