WTN: Bollinger NV

I am not much of a Champagne drinker but like a bottle on occasion. Had never had a Bollinger and was looking forward to the wine. As I remember it was James Bond's wine so it has to be good. The reason I do not drink Champagne is probably out of ignorance but most NV I have tried seem acidic, lacking in complexity and not much more than a bubbly drink that goes well with spicey food. The vintage stuff is much better but the price is way too high for casual enjoyment.

The Bollinger was different. It was fruit driven, soft with a hint of yeast. The flavors lingered on the palate. The bubbles were still there to help with the enjoyment of brined and grilled chicken breast with Thai green beens. Seemed like a great match but also was fun to drink by itself. Since all NV stuff sells for around $40 this will be my choice when grabbing a bottle for a special meal or occasion.
